In a time when finding sushi in Lisbon was as hard as finding bacalhau espiritual in Tokyo, Paulo Morais made his first steps into Japanese cuisine. And from there, he began a long culinary journey through Asian cuisine. Today, he stands out as one of the most knowledgeable Portuguese in the field, and with his wife Anna Lins, he runs Restaurante Umai in Lisbon's Santa Catarina neighbourhood. In his restaurant, Paulo Morais develops "Asian twist", an author's cuisine based on a very unique perspective of Asian gastronomy.
Passionate about sharing his experience, he is also a teacher in Escola Superior de Hotelaria do Estoril, giving classes on Asian and dietetic cuisine.
